Fried Rice

I am going to start sharing some of my favorite recipes. Last night I made a spicy Hawaiian marinated chicken, and fried rice. It was a hit. I took a recipe from food network which if you know me you know I love. I am getting pretty good at changing things up to fit my family tastes. So I changed it up a little bit and whala! I don't usually take pictures of dinner, but I thought for the sake of sharing I would. Let me know if you try it, and if you like it.




  1. Hawaiian marinated chicken. Okay I cheated on this part I used a store bought marinade. Kroger spicy Hawaiian marinade. I marinaded the chicken for 30 minutes and then grilled it. FYI it really isn't that spicy my kids loved it so don't be afraid to try it. It is very sweet however so if you don't like sweet foods you won't like it.

  2. Fried Rice.
  • 2 cups uncooked rice - cook according to package instructions

  • 2tbl of any light cooking oil -vegetable oil will work okay.

  • 1 clove of garlic minced

  • 1 carrot diced

  • 1/2 cup frozen peas

  • 2 medium eggs - lightly beaten

  • 2tbl of soy sauce

  • 2 scallions -green onions


preheat wok to medium heat, add oil, then garlic and carrots. Let cook about 2 mins. Add eggs cook until done about 1-2 min. Add cooked rice and peas. Mix really well. Add soy sauce and mix until well combined and you have that light brown color of fried rice. Garnish top with scallions.



3. I also peeled some oranges which went well as a side. Pineapple would work too.



You could also omit or add just about any vegetable you like, but I think the peas and carrots are traditional. At least in my head.

I've been thinking about posting recipes on my blog too. I love getting new recipes (from people I actually know so that I can call them if I mess it up!) Seems like lately our fast food habit has dramatically increased and we need to get out of that habit. New recipes are great for getting out of a cooking rut.
